Pie Crust:

1 3/4 cups all purpose flour

1/2 tsp salt

8 3/4 tblsp unsalted butter

3 tblsp cold water

Filling:

1/4 cup brown sugar

1/2 cup white sugar

1 tbsp all-purpose flour

1 tsp cinnamon, ground

Dash of salt

3 1/2 cups peeled and chopped Paula Red apples

1 - 8 ounce jar Apple Sauce

1 tbsp lemon juice

2 tbsp butter, small pieces

Sift together flour and salt. Place in food processor, adding butter (chopped small) on top of flour. Process until mixture is the size of small crumbs. Pour into bowl ad add 3 Tblsp cold water and mix until it forms a ball. More water can be added if necessary. Shape dough into a ball and wrap in cling film and refrigerate for about 60 minutes until firm.

Flour surface and roll out dough. Place dough in pie pan trimming to outside of pie pan. Form a ball with leftover dough and cut into stripes.

Make filling - Combine sugar, flour, cinnamon, and salt in a bowl. Stir in apples, apple sauce, and lemon juice. Spoon apple mixture into pie pan and dot with butter. Using the stripes leftover from the dough, arrange in a lattice top on top of the pie.

Bake at 425 degrees F for 10 minutes, then reduce heat to 350 degrees F and continue to bake for 45 minutes or until crust is golden brown.
